Although funk and jazz can definitely make use of pedal tones, it's definitely not a common approach, nor would it qualify as being definitive of the genres. I´m not talking about pedal tones... I´m talking about Modal Jazz... So What has 4 chords. Impressions 2. Cissy Strut (on the funk side) also 2 chords.
I recently caught Ravi Coltrane live, and those guys (with Jonathan Blake) would play forever over vamps... I didn´t enjoy it as much as I enjoyed Kamasi´s.

Yes, but those melodies are instantly memorable. Kamasai's stuff is more about the spectacle of it all.
